Pitting and Slicing Peaches

Start with fresh, ripe peaches

Peel the peaches if you’d like. See Baking Tip #2 directly above.

Cut the peach toward the pit on both sides of the slice. Wiggle the knife on the top and bottom on both sides of the slice to loosen. Flick the knife in the direction of the first slice and the segment will come out. This part can be a bit tricky if the peaches aren’t ripe enough, but if you wiggle the knife enough, the slice should slip right out.
