Chocolate Chip Shortbread

Earlier this week, I was perusing around the convenient store and came across a little book. It was called 500 Chocolate Delights. How was I supposed to turn down that purchase!? I started looking though the book to see what kind of goodies were inside and I came across a very simple recipe for this Chocolate Chip Shortbread. There are only 5 ingredients and I was able to whip it up in just about an hour! It had been a while since I baked for my office, and after baking and assembling a cake for my good friend, this looked like the perfect simple opportunity to relax, bake and fulfill the requests of my colleagues!

What You’ll Need:

  • 1 1/4 Cup of All Purpose Flour, sifted
  • 2 Tbs of Cornstarch
  • 1/4 Cup of superfine sugar
  • 1/2 Cup of Unsalted Butter, diced
  • 3 Cups of chocolate chips

To Prepare:

  • Preheat the oven to 325 degrees F
  • Line the base of an 8″ square pan with parchment paper

Directions:

In a medium-sized bowl, sift together the flour and cornstarch. Add in the sugar, and stir.

Knead the butter into the recipe. The intention here is to maintain small, but visible “pearls” of butter.

Add in 1 1/2 – 2 Cups of the chocolate chips and continue to knead well.

Turn the shortbread dough into the prepared pan and pack it down with the back of a spoon. Prick the dough with a fork and mark 9 squares.

Bake for 35 – 40 minutes until the shortbread begins to turn a pale golden color.

Remove from the oven and let the shortbread cool in the pan for 15 minutes.

Melt the remaining chocolate and spread across the top of the shortbread with a rubber spatula. Cut into the 9 squares you outlined before and serve with a tall glass of milk.

It’s that simple.
